| Peel four ripe (very yellow) plaintains (macho bananas). Cut into three pieces. Slice each of the pieces into 3 or four slices about 1/2" thick. Basically, don't worry about accuracy - some people fry them whole. |
| In a skillet, heat about 1/2" of vegetable or peanut oil until hot. Turn down heat to medium high. Carefully add the slices of plantains and fry, turning once, until they turn a dark, sweet brown - about 3-4 minutes. Drain on paper towels. Serve hot, with sour cream, or even ketchup! |
| Hint: Spice up the sour cream with your favorite hot sauce or curry. |
