Polenta

| Polenta - it can be breakfast, lunch or dinner - a side dish, an appetizer or the main course! I like to add vegetables and/or meats, cheese and/or milk. |
| Prepare instant polenta according to package directions, using a whisk to avoid lumps. Immediately add any other ingredients you like; diced carrots, scallions, celery, browned sausages, cheese, tofu - well, you get the picture, and finish cooking. |
| Eat it hot like mashed potatoes, or pour it into a loaf pan and let it cool. Once cool, it can be sliced and used in a casserole, or slice and fry in olive oil until golden brown, or cut into cubes and serve with a cheese or marinara sauce. Anyway you do it, polenta is an easy crowd pleaser. |
